Preparation
  1. Lightly oil an 8” square silicone pan.
  2. In a large bowl, whisk eggs with oil. Stir in mix, then scrape batter into pan. Smooth top as best you can; batter is dense.
  3. Microwave, uncovered, on high for 4 min. Rest in for 6 min, then unmold onto a cooling rack. Or, bake in preheated 350° F for 15-20 min and cool in pan before serving.
  4. Top with icing, if desired.
Tips

Cooking time may vary based on microwave wattage.

For a vegan option, replace eggs with 2 tbsp ground flax combined with 12 cup water. Let stand 5 min before using.
